Leftovers are the BEST! And will help to keep you on track and nourish your body. This is one of my ‘go to’ lunches. So tasty and quick to throw together. Perfect when you’re short on time.
Ingredients:
100g chicken breast
70g sweet potato cubes
1 cup baby cos lettuce
4 olives, halved
Red onion, around 5-10g
30g avocado
3 cherry tomatoes, halved
Literally put everything in a bowl, season with salt and pepper, and squeeze lemon juice on top.
