Raspberry and Coconut Loaf Recipe

Whatever the weather in Melbourne, you deserve a warm slice of cake! I hope you enjoy this one, super easy and delicious.

Ingredients:
-1 cup almond milk
-1/2 cup maple syrup
-1/4 cup melted coconut oil
-2 tbs lemon juice
-Zest of 1 lemon
-1 3/4 cups buckwheat flour
-1/4 cup vanilla protein powder
-3 tsp baking powder
-1/2 tsp cinnamon
-Pinch of Salt
-1 cup frozen raspberries
-Handful shredded coconut

Method:
-Preheat oven to 180°c
-In a bowl combine: Almond milk, maple syrup, coconut oil, lemon zest and juice.
-In a separate bowl, combine all the dry ingredients
-Pour wet ingredients into dry and mix until combined
-Gently fold through the raspberries
-Transfer to a loaf tin, sprinkle over the shredded coconut
-Bake for 55-60 mins or until golden brown
